New restaurant coming to LP this summer



Lester Prairie residents will soon have more choices to meet their dining needs, without a lengthy drive.

After sitting vacant since closing in September, the building that used to house Jonio’s Pizza and Family Restaurant has been purchased by three people.

Owners Crystal Dayton of Minnetonka, Mike Buesgens of Mayer, and Joyce Paul of Shakopee have plans to turn the building into their own restaurant.

Paul will be a silent partner in the business.

“Joyce and I had been talking about it for 14 years. I got laid off in September, and she said ‘now is the time to do this,’” Dayton said.

The three had been looking for a place in the Mayer, New Germany, Lester Prairie area, and decided this building fit their needs.

They officially bought the building Feb. 23.

Hoping to open the restaurant in the middle of June, in time for Prairie Days, the new owners are busy cleaning and decorating.

The restaurant will be smoke-free, with the exception of the bar area.

It will feature home cooking, with a highlight on specialty foods from other areas, such as Jambalaya.

The restaurant will be called Scooters Bar and Restaurant.
